Rick Mahan, chef-owner of The Waterboy Restaurant and OneSpeed, has been cooking since he was 16 years old. Beginning in 1980, he did his formal training as a chef’s apprentice at the St. Francis Hotel in San Francisco, CA. Upon completion in 1983 he returned to Sacramento, where he worked in several noteworthy establishments, among them Café Natoma, Joan Leineke Café and Paragary’s Bar and Oven. In 1988 he became chef-partner in Paragary’s on Fair Oaks Boulevard, in Sacramento and later in Paragary’s in Folsom California. In 1994 after vacationing in France, he decided to sell his interest in Paragary’s and focus his efforts in a new direction. The Waterboy opened on November 1, 1997 and has evolved into one of Sacramento’s best restaurants.

Friends being such a great part of Rick’s life, he is excited at the prospect of creating a space where he can share his love for his friends, neighbours and great ingredients prepared and presented in a simple, uncomplicated fashion. Being a resident of East Sacramento, he is thrilled to be able to commute via bike to work and will challenge any and all of his friends to bike to OneSpeed. He can’t wait to see you all there!
